Preparing the ham by removing the knuckle, trimming fat and salting completely.

February 8th
Removing salt, washing in red wine vinegar and pressing the hams.

February 10th
Seasoning ham with red and/or black pepper, hanging to age.
Now patience... months of aging ahead!
